Moroccan stew with rice 

ok so I tried this recipe last week but never got around to blogging about it!!

It was really yum, the only problem I find with SW meals is that I find them bland and sees me pouring a tone of salt into it. I MUST STOP!!

Anyway, I would recommend salting to taste or whatever..



2 bell peppers

2 carrots

1 onion

2 garlic cloves

4 chicken breasts

2 400g chopped tomatoes canned

100g frozen peas

150ml chicken stock

1tsp sweetener

Whatever spices u want to add. I just add mixed herbs and spices from my spice rack.

Chop up the peppers, carrots, onions and garlic then using fry light fry the veg in a pan until they are soft.

Add the chicken and cook for a couplw of minutes. Don’t worry if they haven’t cooked through yet.

Transfer the chicken and veg mix to a large pot then add the two tins of chopped tomato, sweetener and chicken stock into the pan.

Simmer for about 20mins then add the peas and cook for another 5mins.

Serve with lots of rice or Couscous 🙂
